Oven Fried Pickles – Recipe

The lovely people of Mrs Elswood sent me some of their famous pickles to try their recipe for frickles (fried pickles) – but since I don't own a fryer and tend not to deep fry things anyway, I asked if I could come up with an 'oven-fried' spin on it instead. I'm happy to report my oven fried pickles recipe was a success!






Ready? Let's go.

Ingredients:

150g plain flour
1 tsp onion powder
1 tsp garlic powder
1/2 tsp chilli powder
1/2 tsp cracked black pepper
Pinch of sea salt
200ml plain natural yoghurt
6 Mrs Elswood dill pickle spears
Cooking spray
Fresh dill to garnish
Aioli to serve

Method:

1. Preheat the oven to 200°C, line a baking sheet with foil and grease with oil.

2. Combine the dry ingredients together and spread onto a large plate, and put the yoghurt into a separate wide bowl.

3. Drain the pickle spears and pat dry with kitchen paper. Coat with the flour mixture, followed by the yoghurt, and finally in the flour mixture again.

4. Place on your prepared baking sheet, spritz with cooking spray, and bake for about 45 minutes, until golden brown and bubbling.

5. Tear over some fresh dill and serve with the aioli for dipping.
