Vegan Tofu Chocolate Mousse – Recipe

This is one of the most simple desserts you could ever make – and it's totally vegan too.

Ingredients for Mousse:

150g dark chocolate (brands like Lindt 70% dark chocolate happen to be vegan)
140g block soft silken tofu
3 tbsp maple syrup

Ingredients for Topping:

1 can full-fat coconut milk, refrigerated overnight
Berries and vegan biscuits (again, Lotus are unintentionally, handily vegan)

Method:

1. Place the chocolate in a bowl over simmering water and melt.

2. Place the tofu, melted chocolate and maple syrup in a blender and blend until smooth. You may need to scrape the sides down once or twice to thoroughly mix everything.

3. Divide evenly between four serving glasses.

4. Carefully open the tin of coconut milk: the coconut cream should have solidified at the top. Scoop the cream into a bowl and whip until fluffy.

5. Pipe on top of the chocolate mousse.

6. Dot with berries and biscuits as you like.
