Flower Terrarium Pudding – Recipe

I make so much cake, I always have some left over lurking in the freezer. I could make cake pops, but to be honest I'm not overly keen on them. I do however like an unusual trifle, which is basically what this dessert is: a fancy chocolate trifle made up like a terrarium.



If you're not crazy like me and have cake bursting out of every corner of the kitchen, feel free to buy any basic chocolate sponge. Even cut up mini-rolls would work well. You could make from scratch, but to be honest this is a quick party food, and the main appeal is that it's fun and quick to whip up.


RE the chocolate pudding, I used one by a brand called 'Simpy Delish', but you can use any just-add-milk instant pudding (like Angel Delight).

Ready? Let's go.

Makes 4.

Ingredients:

90g chocolate sponge cake
1 packet instant chocolate pudding, made to pack instructions (but not yet chilled)
5 regular Oreos, crushed into crumbs
5 Golden Oreos, crushed into crumbs
Icing flowers
Green buttercream (I made my own, but colouring up store-bought frosting will work too)

Method:

1. Cut the cake up into little chunks and layer at the bottom of four short tumblers, pressing lightly to create an even layer.

2. Pipe a layer of chocolate pudding on top.

3. Sprinkle a couple of teaspoonfuls of Golden Oreo crumbs over the top.

4. Pipe another layer of pudding over the blonde crumbs, and sprinkle over the regular Oreo crumbs on top.

5. Arrange your icing flours and pipe green buttercream leaves as you like.


6. Chill for an hour before serving (not for too long, as you don't want the crumbs to lose their crunch).
