Giant Rice Cooker Banana Pancake – Recipe

I've been pretty with some pretty evil migraines this week, so I needed something quick, easy and relatively healthy to make during the periods of time I was more or less functioning. Hello, magical rice cooker, hello 3-step pancakes.




This recipe has no added sugar or fat. I drizzled over some brown rice syrup and sliced an extra banana over the top for extra healthy fun, but feel free to break out the Nutella or anything else you fancy.


Ready? Let's go.

Ingredients:

2 very ripe bananas
2 eggs
150g self-raising flour
100ml milk

Method:

1. Place all the ingredients in a blender and whizz until smooth.

2. Lightly oil the inside of the rice cooker bowl, pour the batter in and cook for 50 minutes to an hour, or until a toothpick inserted in the centre comes out clean.

3. Leave to cool for five minutes before turning out onto a serving dish and slicing to serve.
