3-Ingredient Rum Chocolate Mousse – Recipe

2020 might be a mess with this whole coronavirus thing, but that doesn't mean we can't eat well with simple ingredients.


My chocolate mousse recipe just needs milk and chocolate. It uses the same principle as Hervé This' water chocolate mousse, only I use milk instead of water for a less cloying, lighter flavour.


Ready? Let's go.

Serves 2.

Ingredients:

100ml milk (dairy or non-dairy)
20ml dark rum (or 20ml more milk, if you don't want the booze)
100g dark 70% chocolate

Method:

1. Break the chocolate into a heatproof bowl.

2. In a small saucepan, bring the milk to a simmer, then pour it over the chocolate, followed by the rum.

3. Set the bowl over a bigger bowl full of ice and whisk with a balloon whisk until it starts to thicken.

4. As soon as it starts to thicken, lift the bowl out of the ice and continue to whisk until it just holds it shape.

5. Spoon or pipe into serving dishes and serve immediately.
