Christmas Matcha Rocky Road – Recipe

Stuck for gift ideas this Christmas? Give them homemade matcha rocky road – it takes about five minutes to whip up and the rest of the time it's just chilling (literally) in the fridge.





Feel free to replace the cranberries, apricots and Oreos for your chosen biscuits and dried fruits – as long as you stick to the rough quantities you can't go wrong.


Ready? Lets go.

Ingredients:

400g white chocolate
2 tbsp matcha
180g marshmallows, roughly chopped (I used scissors, much faster!)
100g Oreos, roughly broken up
75g dried cranberries
75g dried chopped apricots

Method:

1. Line an 8x8 inch 8x8" square baking tin with clingfilm.

2. Set a large heatproof bowl over a pan of barely simmering water, making sure the bowl doesn't touch the water.

3. Add the chocolate and matcha to the bowl, and stir until melted and combined.

4. Take the bowl off the heat, and add the rest of the ingredients. stirring until everything's evenly coated with chocolate and mixed around.

5. Spoon into the lined tin, smoothing with the back of a large spoon.

6. Cover the top with more clingfilm, packing it down lightly to compress a little.


7. Pop in the fridge to set for at least four hours, or overnight.

8. Unmould from the pan, peel away the clingfilm and chop into squares.
