Easy Pumpkin Spice Pancakes Recipe

This is the easiest pumpkin spice pancakes recipe ever, and it makes really fluffy, tender pumpkin pancakes.


I love pumpkin spice / pumpkin everything and I'm willing to own it. And since it's October, it's time for pumpkin everything! In this case, pumpkin spice pancakes.

This is how you get your pumpkin spice fix for breakfast. Using real pumpkin purée, these super fluffy pumpkin pancakes are really easy to make, and literally just take minutes from start to finish.

I like these pumpkin spice pancakes served simply with a little butter and maple syrup. Even better: slightly salted butter. The touch of salt alongside the subtle sweetness of the pancakes themselves and the rich sweetness of the maple syrup is divine

Ready? Let's go.

Ingredients:

120g self-raising flour
2 tbsp light muscovado sugar
Pinch of salt
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
Pinch of ground cloves
1 egg
2 tbsp vegetable oil
100g pumpkin purée
100ml milk

Extra oil, for cooking

Method:

1. Stir all the dry ingredients together in a bowl, followed by the wet ingredients, and stir until smooth.

2. Pour a little oil in a nonstick frying pan, wipe away excess oil, and heat on a low to medium heat.

3. Drop a spoonful of pancake batter onto the frying pan and cook for about a minute and a half, or until the surface bubbles. Flip and cook for another 30 seconds before plating up. Repeat with the rest of the pancake batter until all used up.

4. Serve with butter and maple syrup, or your favourite pancake additions.
