Baked Matcha Doughnuts – Recipe

These baked matcha doughnuts are super easy to make. The chocolate decorations are a little trickier, but don't worry – I'll show you how to make these too.

(Makes about 8 doughnuts.)

Ingredients for Doughnuts:

100ml milk
1 egg
25g unsalted butter, melted
50g caster sugar
115g self-raising flour
Pinch of salt
2 tsp matcha, sifted

Ingredients for Matcha Chocolate:

100g white chocolate (buttons, chips or chopped)
2 tsp matcha, sifted

Ingredients for Glaze:

150g icing sugar
2 tbsp matcha, sifted
2 tbsp milk (approx.)

Method:

1. Preheat the oven to 180°C and lightly grease your doughnut pan (no need to grease if it's silicone).

2. To make the doughnuts, lightly whisk the wet ingredients together. Then place the dry ingredients in a bowl, and pour wet into dry, stirring with a balloon whisk until just combined (don't over stir or you'll get tough doughnuts).

3. Fill a piping bag with the batter, and fill your moulds about 1/2 to 3/4 of the way full (you may need to do two batches depending on your pan). Bake for about 12–15 minutes, and leave to cool completely.

4. To make the chocolate decorations, add about 1/2 of your white chocolate and the matcha to a heatproof bowl sitting over a pan of just-simmering water (make sure the bottom of the bowl isn't touching the water). Stir gently, and take off the heat when about halfway melted. Continue to stir until the rest of the chocolate has melted, scraping down the sides of the bowl as you go, and gradually add the rest of the chocolate bit by bit, each time stirring until completely melted.

5. When the chocolate begins to become stiff and won't melt any more, return the bowl to the heat for just 5–10 seconds to loosen it up for working with (not any longer or you'll bring it back out of temper). Spoon into a silicone chocolate mould, tap on the counter to get rid of air bubbles and level the tops with a spatula. Pop in the fridge to set.

6. Stir the glaze ingredients together until smooth, dip your cooled doughnuts, decorate with your chocolates and other sprinkles if you like, and leave to dry.
