Easy No-Bake Baileys Chocolate Cheesecake Recipe

For my dad's birthday this year, he requested a Baileys chocolate cheesecake. Since it's around 30°C at the moment I made it a no-bake Baileys chocolate cheesecake.


Like my no-bake Oreo matcha cheesecake, this no-bake cheesecake takes just minutes to whip up – but you do need to make it a few hours in advance (preferably overnight) to give it a chance to set in the fridge.

Ingredients for Cheesecake Base:

200g Oreos
60g unsalted butter, melted and cooled

Ingredients for Cheesecake:

200g dark chocolate
100g milk chocolate
250g cream cheese
150g full-fat Greek yoghurt
75g caster sugar
50ml Baileys

Ingredients for Baileys Cream Topping:

200ml double cream
2.5tbsp Baileys
1 tbsp caster sugar

Topping:

50g milk chocolate

Method:

1. Line and lightly oil a 7" springform cake pan with nonstick baking paper or foil and vegetable oil.

2. Crush the Oreos in a large sandwich bag with a rolling pin, or give a quick whizz in a food processor until you have crumbs. Stir in the melted butter, and pack firmly into the bottom of your cake pan.

3. Melt the dark and milk chocolate together in a heatproof bowl set over a pan of simmering water (or in quick 30-second bursts in the microwave), and leave to cool completely. Then stir in the cream cheese, yoghurt, caster sugar and Baileys.

4. Scoop into the cake pan, tapping the pan on the counter to get rid of air bubbles and then smoothing the top to level off the mixture.

5. Pop in the fridge for at least four hours, or preferably overnight.

6. Run a knife around the edge of the tin and release the cake on it, popping it on a serving plate.

7. Whisk the double cream, Baileys and caster sugar together until spoonably thick, and spread thickly on top of your cheesecake. Pop in the fridge to set for one more hour.

8. To finish off the cake, melt the milk chocolate (the same way you melted the chocolate for the cheesecake) and leave to cool. Then drizzle all over the top of your no-bake Baileys chocolate cheesecake. You can pop it in the fridge to set the chocolate for a few minutes, or serve straight away.
