Mini Baked Camembert Recipe

This mini baked camembert recipe is the perfect remedy for long, cold nights.


The festivities may be over, but melted cheese is for life, not just for Christmas. Baked camembert (and baked brie also works too) is not just a great party food or starter – it's a super quick comfort meal for those evenings when you're tired out by life but still want something tasty and hot to cheer you up.

Serve this hot molten cheese with whatever dippable things you like – vegetable sticks, grapes, crackers, toast, you name it.

Ingredients

1 mini camembert
2 tsp extra virgin olive oil
2 cloves garlic, sliced
1 tsp runny honey
A few sprigs of fresh rosemary
Freshly ground black pepper

Method:


1. Preheat the oven to 180°C.

2. If your camembert is in a wooden container, you can bake it in there (just take off the lid). If it's in a laminated cardboard container, take it out and roughly shape some baking parchment around it.

3. Score criss-cross diamond shapes in the top of the cheese, drizzle over the oil and honey, stick in the garlic slices and rosemary sprigs in the top, and grind some freshly-cracked black pepper over the top.

4. Place the cheese (either in its wooden base or your makeshift baking paper boat) on a small baking tray. Bake for 20 minutes, and serve immediately (wait two or three minutes for the cheese to cool just a tiny bit – but no more than five or it'll start solidifying again).
