Easy Pistachio Buns Recipe

This easy pistachio buns recipe is so easy, you can make them when you're sick (like I did).


I had a terrible cold but was really craving some sweet, freshly-baked buns. Luckily for me I had some frozen brioche dough in the freezer, so I could cheat and not have to make dough from scratch.

The pistachio swirl buns are just the right amount of sweet, soft, fluffy, and comforting. And the crunch from the chopped pistachios on top gives an extra bit of texture to them.

Pistachio creme can be easily found online. But in a pinch, Nutella works well, too.

(Makes six buns.)

Ingredients for Buns:

450g ready-to-bake bread dough (preferably brioche dough)
3 tbsp pistachio creme

To Glaze:

1 egg
Dash of milk

To Top:

1 tbsp pistachio creme
1 tbsp milk
50g icing sugar
50g chopped pistachios

Method:

1. Roll the dough out to about a 30x30 square on a clean work surface lightly dusted with plain flour.

2. Evenly spread the pistachio creme on top, leaving about 2cm free from the edge furthest away from you. Dampen this free edge with a little water, and roll the dough up from the edge closest to you towards the free edge so you have a roll.

3. Using some tough string or unflavored dental floss, slice the log into six rounds (simply slide the string underneath where you want to cut, cross the string over on top and pull).

4. Place the rounds cut-side-up in the bottom of the loaf tin side by side, cover with clingfilm, and leave to proof until doubled in size (one to two hours, depending on how warm your room is).

5. When the dough is just about ready to bake, preheat the oven to 180°C and grease a large (about 1.5lb) loaf tin with a little vegetable oil or butter.

6. Beat the egg and milk together and brush on top of your risen dough. Bake for about 20 minutes, or until puffy and golden, and let the buns cool for 5–10 minutes.

7. Stir the pistachio creme, milk and icing sugar together to make the icing. While the buns are still warm, drizzle over them, and sprinkle the pistachios on top.

8. Leave to cool a little more and for the icing to set before serving.
