Tiramisu Pancakes Recipe

 A tiramisu pancakes recipe for those of you who also like eating dessert for breakfast.


These tiramisu pancakes use my fluffiest ever pancakes recipe as a base, and a simple lightly-sweetened whipped mascarpone cream as a filling.

As dessert for breakfast goes, this is pretty rich. A lot of 'dessert for breakfast' recipes use yoghurt instead of cream, but I decided to go the whole hog and use cream and mascarpone for the filling. After all, the pancakes themselves aren't exactly healthy, and these tiramisu pancakes are more of a treat, not an everyday thing.

If you want, you can also add a tablespoonful of marsala wine, rum or brandy to the coffee dunk to make it even more tiramisu-y, but it might be a bit much for a boozy breakfast. Then again, boozy brunch is a thing – no judgement there.

Ingredients for Pancakes:

120g self-raising flour
1 tsp baking powder
2 tbsp caster sugar
Pinch of salt
1 egg
2 tbsp melted unsalted butter
130ml milk
1 tsp vanilla (optional)

Ingredients for Coffee Dunk:

1 tsp instant coffee
200ml hot water
1 tsp vanilla
1 tbsp caster sugar

Ingredients for Filling:

200g mascarpone
200ml whipping cream
2 tbsp caster sugar

To Dust:

Cocoa powder

Method:

1. To make the pancakes, stir the dry ingredients together in a bowl, make a well in the centre and crack the egg in. Then add the butter and vanilla, and gradually stir in the milk until smooth. Let the batter rest for 10 minutes for thicker, fluffier pancakes.

2. Lightly oil a frying pan, and cook scoopfuls of the pancake batter on a medium heat: when the surface of the pancake bubbles (about two minutes), flip them over and cook for another minute and a half to two minutes. Set the pancakes aside on a plate to cool to room temperature.

3. To make the coffee dunk, simply stir all the ingredients together until the coffee and sugar is fully dissolved.

4. To make the filling, gradually stir the whipping cream into the mascarpone and sugar until smooth, and beat with an electric whisk until fluffy and pipeable.

5. To assemble the tiramisu pancakes, take one pancake, dip both sides into the coffee mixture, and place it on a plate. Pipe blobs of the mascarpone cream on top, then take another pancake and repeat. Do this with three pancakes in total, finishing with mascarpone cream piped on top, and dust with a little cocoa powder.

6. Repeat with your remaining pancakes, and serve your tiramisu pancakes.
