Banana Milkshake French Toast Recipe
What if you made French toast with banana milk instead of regular milk? That's the thought that led me to make this banana milkshake French toast recipe.
You can make French toast with any kind of milk, really. Dairy, soy, oat... or, in this case, flavoured.
I recommend using a thinner banana milk drink to make this rather than one of those super-thick premade milkshakes that come in small bottles. This is because you need the milk to be thin enough for the bread to absorb. I find supermarket own-brand banana milk works well. Or, you can use banana milkshake powder like Nesquik to make your own.
Although totally optional, I like to soak my French toast overnight in the fridge so that it's extra custardy. It's also nice to wake up to French toast ready to throw in the frying pan, but you can also just give it an hour-long soak before you cook it, rather than doing it the night before.
I also served this with some pouring custard that I made with custard powder (the kind you can get in a cardboard tub) and banana milk instead of regular milk and sugar. And, of course, slices of fresh banana.

Ingredients for French Toast
2 eggs
200ml banana milk
1/4 of a loaf of brioche (preferably a bit stale and dry)
A little vegetable oil (for cooking)
Ingredients for Toppings:
Banana slices
Custard (I made banana custard with custard powder and more banana milk)
Method:
1. Beat the eggs and banana milk together until well combined.
2. Soak the brioche for a couple of minutes on one side, rotate to dip all sides, flip over and continue to soak for another hour. You can also let it soak overnight in the fridge.
3. Lightly oil and heat a pan on medium heat. Carefully lower in the soaked brioche, cover and cook on a medium heat for 5–10 minutes. Then flip, cover again and cook for about five more minutes on the other side.
4. Plate up, and serve with banana slices and custard.
