Leftover Mince Pie Brownies Recipe
When you're sick of mince pies, make my leftover mince pie brownies recipe. Because chocolate makes everything better.
These mince pie brownies aren't exactly pretty, but they are delicious. They're the perfect way to use leftover mince pies with minimal fuss (and minimal washing up afterwards).
If you want the 'aesthetic method', chop up the mince pies into neat chunks before gently stirring them into the brownie batter. This way, you'll get pretty, defined chunks of pastry dotted throughout your brownies.
But if you, like me, are on your last brain cell for the year and just want something you can throw together in a single bowl with a single spoon, use this chaotic method of roughly smooshing up the whole mince pies into the brownie batter.

Ingredients:
185g unsalted butter
185g dark chocolate (at least 70% cocoa solids)
200g caster sugar
3 eggs
1 tsp vanilla extract or vanilla bean paste
85g plain flour
40g cocoa powder
Pinch of salt
4 mince pies (regular-sized, not the mini ones)
Method:
1. Preheat the oven to 180°C, grease an 8x12" rectangular baking tin with a little vegetable oil and line the bottom with non-stick baking paper (the oil will help the paper cling to the tin and not move around).
2. Melt the butter and chocolate together in a heatproof bowl, either by sitting the bowl over a pan of simmering water, or by microwaving in short bursts. If using the water method, make sure the water doesn't touch the bottom of the bowl, so it doesn't get too hot.
3. Take the bowl off the heat and stir in the sugar. Next, beat in the eggs and vanilla.
4. Add the flour, sift in the cocoa powder and add the salt, and stir until smooth.
5. Drop in your mince pies and use your mixing spoon to crush and stir them roughly into the brownie batter.
6. Bake for 25 minutes, and then leave to cool before cutting and serving.
