Norwegian Waffles Recipe (Cardamom Waffles With Brunost, Jam and Sour Cream)
My Norwegian waffles recipe takes a leaf out of a popular Oslo cafe's book, and serves it with brunost, sour cream and jam.
Norwegian waffles are made in a shallow waffle iron with iconic heart-shaped segments, and are often flavoured with cardamom. To make my waffles, I adapted Matprat.no's vafler recipe, converting everything from decilitres into millilitres and grams, and adding salt and vanilla to the batter to bring out the flavours even more.
My favourite way to serve my Norwegian waffles recipe? With Norwegian brown cheese, jam and sour cream.
Brunost, also known as brown cheese, is a Norwegian 'cheese' that technically isn't actually cheese at all. It's whey, cream and milk that's boiled down until caramelised. The result is a delicious treat that tastes like a cross between clotted cream fudge and medium-mature cheddar: tangy, sweet, creamy, caramel-y and umami.
If you're trying it for the first time and not used to it, many people advise you not to eat it by itself, and instead to enjoy it the traditional way: with waffles, bread/toast or crispbread and a bit of butter or jam (or both). I took this advice and tried it with waffles for my first try, and now I even love eating it by itself.
On looking up more about how brunost and Norwegian waffles are usually eaten, I stumbled upon Haralds Vaffel – a dessert cafe specialising in Norwegian waffles in Oslo. Their classic combo is brunost, sour cream and jam, and ever since trying this topping combo at home, I've never looked back: Haralds Vaffel's way is the only way for me. I think they serve it with raspberry jam, but I serve mine with strawberry (just a personal preference).

(Makes about 10 waffles.)
Ingredients:
240g plain flour
90g caster sugar
1 tsp baking powder
1 tsp ground cardamom
Pinch of salt
3 eggs
400ml milk
100g unsalted butter, melted and cooled
1 tsp vanilla extract
To Serve:
Thinly-sliced brunost
Strawberry jam
Sour cream
Method:
1. Preheat your waffle iron, and grease with a little vegetable oil.
2. In a large bowl, stir the flour, sugar, baking powder, cardamom and salt together. Make a dip in the centre.
3. Crack the eggs into the centre of the flour, and start stirring in the milk, working from the inside out to prevent lumps.
4. Stir in the butter and vanilla.
5. Pour into your waffle machine and cook to your favourite level of softness/crispness.
6. Serve hot with your favourite toppings (in my case, brunost, jam and sour cream).
