Three Ingredient Stretchy Milk Mochi Recipe (鲜奶麻糬)

This super easy three ingredient stretchy milk mochi recipe makes super soft, gooey fresh milk mochi in just minutes.


Stretchy milk mochi, also known as fresh milk mochi, is a super fun, versatile dessert that can be served in different ways.

The simplest (and most traditional) way to serve it is with roasted soybean powder, ground sesame seeds or crushed peanuts mixed with sugar. I've served mine here with sweet roasted soybean powder, Bourbon biscuit crumbs and matcha biscuit crumbs.

To make the biscuit crumbs, I simply place a few biscuits in a sandwich bag and bash them with a rolling pin. Oreos are a popular topping for fresh milk mochi in Taiwan and China, but I prefer Bourbon biscuits myself.

I cheated a bit with the matcha biscuits, crushing plain butter biscuits together with a little matcha powder.

You can also serve stretchy milk mochi with fresh soft fruits, like chopped strawberries and mango, or with other Chinese or Asian desserts like tofu pudding, bubble tea, sweet soups and shaved ice.

(Serves two.)

Ingredients:

20g tapioca flour
10g caster sugar
200ml milk (I like full fat, but you can use any kind of milk, including non-dairy)

Topping Ideas:

Sweet roasted soybean flour (1 tbsp kinako mixed with 1 tsp caster sugar)
Sweet sesame powder (1 tbsp white or black sesame seeds blended into powder with 1 tsp caster sugar)
Chocolate biscuit crumbs (3 Bourbon biscuits or Oreo cookies, crushed)
Matcha biscuit crumbs (3 shortbread or butter biscuits crushed and mixed with 1 tsp matcha)

Method:

1. Stir the tapioca flour, sugar and milk together in a small pan.

2. Switch the heat on to medium, and stir continuously until the mixture is thick and gloopy.

3. Scrape into a bowl and cover so it doesn't dry out, leaving it to cool a little.

4. Serve with whatever sweet things you like – I like a mixture of roasted soybean flour and sugar, or roasted peanut or sesame powder and sugar, or chopped fruit.
